Pectinase is a multi-enzyme complex that decomposes pectin, usually including protopectinase, pectin methyl ester hydrolase, and pectin acidase. Through their combined action, pectin can be completely decomposed. Natural pectin is converted into water-soluble pectin under the action of protopectinase, pectin is catalyzed by pectin methyl ester hydrolase to remove the methyl ester group to produce pectin acid, pectin acid is degraded by pectin hydrolases and pectin lyases to produce galacturonic acid.
