Xanthan gum is a hydrophilic polysaccharide produced by the fermentation of Aeromonas spp. It possesses a variety of anti-tumor, anti-viral, anti-bacterial, and immunomodulatory activities, and is capable of stimulating the in vitro expansion of CIK cells.
