Soy Superoxide Dismutase (EC 1.15.1.1) catalyzes the dismutation of superoxide radicals into hydrogen peroxide and molecular oxygen. It plays a crucial role in cellular defense against oxidative stress. Additionally, Superoxide Dismutase competes with nitric oxide (NO) for superoxide anions, thereby promoting the activity of NO by preventing the formation of peroxynitrite.
