Anhydrolutein III is a carotenoid found in the human diet. It is formed from lutein through oxidation and dehydration reactions. Anhydrolutein III has been shown to have a protective effect on the human retina, where it may help reduce age-related macular degeneration (AMD). The carotenoids are light-harvesting complexes that are located in the retinal pigment epithelium and play an important role in visual function and eye health. They have been shown to protect against light damage by acting as antioxidants. Lutein, one of the most studied carotenoids, has been shown to be associated with reduced risk of AMD.
