Avenanthramide C is a member of complex of phenolics produced by oats (Avena sativa) isolated and synthesised by Collins, Food Research Centre, Agriculture Canada in 1989. Structurally avenanthramides are a fusion of cinnamic and anthranilic acids. Specifically, avenanthramide C is a conjugate of caffeic acid and 5-hydroxyanthranilic acid. Avenanthramide C acts as a plant phytoalexin and antioxidant to protect oats from pathogen attack.
