Diphenyliodonium iodide is an inhibitor of reactive oxygen species (ROS) generation. It prevents the accumulation of bis-demethoxycurcumin in fresh-cut yam by inhibiting the phenylpropanoid pathway and the biosynthesis of bis-demethoxycurcumin, thereby preventing browning. Diphenyliodonium iodide finds applications in medicine and fruit preservation.
