Allitol is a rare natural polyol that can be used as a sweetener. Allitol is a sugar alcohol formed by linking D- and L-hexoses in a process called izumoring. Allitol has anti-diabetic effects in a long-term allitol diet rat model. Allitol significantly increases the phylum Bacillota and decreases the phyla Bacteroidetes Actinomycetota, and Pseudomonadota. Allitol significantly increases the levels of butyric acid-metabolizing enzymes in a PICRUSt2 gut microbiota analysis. Allitol is an important intermediate for the preparation of the agents which against diabetes, cancer, and viral infections, including AIDS[1][2].
