Xylanase is a hydrolytic enzyme. Xylanase can cleave the beta-1,4 backbone of xylan, a polysaccharide found in plant cell walls. Xylanase can be used to improve the filtration of wort and reduce turbidity in the final product. Xylanase can also be used as an antibacterial or antioxidant in the production of polysaccharides[1].
