Lipase (MS grade) is a mass spectrometry-grade lipase. Lipase catalyzes the hydrolysis of ester bonds in triacylglycerols (TAGs, i.e., oils/fats) to produce free fatty acids, diacylglycerols, monoacylglycerols, and glycerol. Lipase (MS grade) is commonly used in enzymatic reactions to perform structural analysis and isomer differentiation of complex lipid mixtures (especially glycerides) prior to mass spectrometry analysis[1][2].
